AIP Thai pork and cauliflower rice

I love Thai food! When I had my ulcerative colitis flare up, I had to come up with an AIP compliant, low FODMAP recipe. This is it.

It has just a few ingredients, it is quick to make and it does taste like a thai dish. Yummy!

This recipe is served with cauliflower rice. You can make the rice in advance or cook it while cooking this dish.

AIP Thai pork and cauliflower rice – prepare
  • 1.chop the cilantro, place it in bowl
  • 2.peel and cut the carrot in sticks about 3cm2.2in long then put it in a bowl
  • 3.cut the lemongrass stick in 3 and then transversely in half and place it a bowl
  • prepare the meat:
  • 4.cut the meat in thin stripes, 2-3cm1-1.5in long, 1.5-2cm0.6-0.8in wide and 0.7cm0.3in tick, put it in a bowl
  • 5.add the juice from the lemon, 1 tbs of brown sugar, 3 tbs fish sauce, 1 ts galangal and 1 ts ginger paste. Mix well with the hands and wash them afterwards.

  • place the cast iron pan on high heat

  • add 1 tbs of coconut oil
  • add the lemon grass

  • add the meat, in small batches

  • sprinkle 1 ts tapioca flour over the meat
  • stir

  • add 1 ts of turmeric powder
  • stir

  • add the carrots and stir

  • add the chopped coriander and stir
  • fire out
  • done, enjoy!

Put 4-5 tbs of cauliflower rice flat in the plate and on top 3-4 tbs of meat and veggies, with sauce. Serve hot.
