Fried cauliflower rice with mushrooms

Easy to make, no grains, paleo "rice". It can be a side dish as well as the meal for breakfast or lunch.

I started making cauliflower rice back in 2013, with my first UC flare up. Since then I’ve dicovered how versatile it is, a really great substitute for rice. This recipe I use mostly as a side dish in meals inspired from the Asian cuisine.

(5 minutes)

  • 1.finely chop the garlic and ginger root and place it in the bowl
  • 2.slice the spring onion and place it in another bowl
  • 3.slice the mushrooms. Cut them in half and then slice 4-6 pieces out of each half. Put them in the mushroom bowl.
  • 4.dice the pepper bell and place it the pepper bowl.
    * skip for strict AIP
  • a large bowl, grate the cauliflower (extra coarse). It should look like large grains of rice. Add a 1 ts of salt and mix.

  • place the pan on high heat
  • add one tbs of fat (coconut oil, lard)

  • add the grated cauliflower
  • turn heat to medium

  • stir

  • take out the cauliflower
  • turn high heat
  • add 1 tbs of coconut oil (or some other oil/fat you like)
  • add the chopped garlic and chopped ginger root
  • add the mushrooms

  • heat to medium
  • add 1/2 the green onions
  • stir
  • move the content to one half of the pan
  • add the pepper in the other half
    * skip for strict AIP

  • stir all
  • move the content to one half of the pan
  • crack one egg in the other half
    * skip for strict AIP
  • add 2 tbs of oyster sauce on top of the egg

  • add the cauliflower
  • stir well

  • fire out
  • put everything in a large bowl
  • add the rest of the spring onion
  • (optional) squeeze 1/2 lime
  • add the fried onion
  • mix and serve immediately


Don’t wait too long before serving or the fried onion will lose its crunchiness.
If you serve it as is, put it in bowls and warn the children it is hot!
