Pumpkin volcano for dinner


Have a pumpkin? Make a volcano for dinner! It is really easy to make, full of flavour and spectacular looking.

Choose a fatty cut of pork for this, for example pork neck. Turmeric is soluble in fat and therefore its absorption is increased with this recipe. Add some black pepper if you want to increase turmeric bioavailability.

Prepare

Pumpkin volcano for dinner – prepare
  • 1.cut the tail of the pumpkin off, so that it leaves a large enaugh opening to scoop out the seeds with a spoon and to add the meat fill later on.
  • 2.peel the carrot and parsley. In a bowl, grate them both large, using a veggie grater.
  • 3.cut the meat in cubes 1.5cm0.6in and put it in a large bowl. Sprinkle 1ts of salt over it.
  • 4.add 2ts of turmeric powder, 1 ts of thyme and 1 ts of oregano.
  • 5.peel and dice finely 3 ginger roots, and add it to the meat bowl. Mix everything in the meat bowl a bit with a spoon.

  • put the cast iron pan on medium heat
  • add 1 tbs of coconut oil (or any oil you like to cook with)

  • add the meat
  • put 150ml5oz of water to boil

  • add the boiling water and stir.

  • add the grated veggies
  • squeeze the lime juice over it
  • stir
  • preheat the oven at 230C440F

  • turn the fire out under the pan
  • fill the pumpkin:
  • put the pumpkin in bowl
  • using a spoon, start filling it with the meat
  • begin by evenly filling the pumpkin at the bottom, pressing a bit with the spun to make sure no empty spaces are left inside.
  • fill it such a way that some of the filling creates the volcano lava cone

  • put the pumpkin in the oven for 30 min.

  • oven out
  • take the pumpkin bowl out on a wooden plate and let it rest 5 min before serving

Put the volcano on the table for the kids to enjoy but warn them it is hot! No touching!

In each plate put 3-4 spoons of meat and scoop out 3-4 spoons of pumpkin.
