1.put 1l34fl.oz of water to boil 2.peel the carrots, parsnip and parsley 3.in bowl, with a grater, grate the carrots, parsnip and parsley 4.chop the spring onion and place it in a bowl 5.chop the garlic greens and place them with the yogurt in a bowl 6.cut the tripe in stripes 2cm0.8in long and ”0.3in” wide and put it in a soup pot. 7.add 150ml5fl.oz vinegar and pour the boiling water over it. Let it sit there until they’ll be added to the soup. We do this to remove some of the tripe odour. 8.put 1.5l50fl.oz of water to boil
Put 1 ladle of tripe and 1 ladle of soup in each plate for kids. For the grownups, the more the better.
Serve hot, with some (pickled) chillies and salt.
