Tripe soup


This recipe is based on a traditional Romanian recipe, modified to be AIP compliant and low FODMAP.

Some people may never go over the idea of eating tripe but those that can, they’ll discover a spectacular soup, nutritious, filling and yet easy going. Eaten with some pickled chili peppers, it is said to be the best thing for getting through the morning hangover.

My children love it too; they eat 2 portions every time I cook this for them.

Oh, make sure you buy some quality tripe. It should be white, with no yellow or dark stains on it!

Prepare

(10 minutes)

Tripe soup – prepare
  • 1.put 1l34fl.oz of water to boil
  • 2.peel the carrots, parsnip and parsley
  • 3.in bowl, with a grater, grate the carrots, parsnip and parsley
  • 4.chop the spring onion and place it in a bowl
  • 5.chop the garlic greens and place them with the yogurt in a bowl
  • 6.cut the tripe in stripes 2cm0.8in long and ”0.3in” wide and put it in a soup pot.
  • 7.add 150ml5fl.oz vinegar and pour the boiling water over it. Let it sit there until they’ll be added to the soup. We do this to remove some of the tripe odour.
  • 8.put 1.5l50fl.oz of water to boil

Cook

  • put the bones in the pressure cooker
  • add 1.5l50fl.oz of boiling water
  • and 2 ts of salt
  • fit the lid on and put it on medium-low heat for 30 minutes

  • put the pot with tripe on lowest possible heat you have

  • fire out under the pot with the tripe

  • heat out for the bone broth.
  • put the pressure cooker to cool in the sink in cold water, if your model requires it
  • strain the tripe of water and vinegar
  • open the pressure cooker and take the bones out
  • add the tripe
  • add the carrots, parsnip and parsley
  • and juice from one lemon
  • and the bay leaf
  • stir

  • put the pressure cooker with the soup on medium heat, with the lid on, for 15 minutes.

  • fire out
  • put the pressure cooker to cool in the sink in cold water, if your model requires it
  • open it
  • take 1 ladle of soup, mix it with the yogurt and pour it back in
  • add the onions and stir
  • let it rest for 5-10 minutes before serving

Put 1 ladle of tripe and 1 ladle of soup in each plate for kids. For the grownups, the more the better.
Serve hot, with some (pickled) chillies and salt.
